Bio:Are you a vegetarian? Are you thinking about becoming one?

Do you have a stack of vegetarian cookbooks that are just gathering dust?
Do you get scared when you see recipes that have tempeh in them?
Do you tend to eat the same 3 meals over and over?

Well welcome to The Slacker Vegetarian! I will share with you some of my quick, no-nonsense, tasty recipes that I have gathered over the past 10 years of being vegetarian.

Now I'm a lacto-ova vegetarian, which means that I eat dairy and eggs. I'm also a vegetarian for medical reasons, so I'm not a member of PETA. I still eat stuff that isn't 100% vegetarian (like gravy from the packet, or soup with chicken stock in it) I do eat tofu and the other products that run along that vein.

I started to come up with some of my recipes when I made a startling observation: One day I was eating a breakfast of an Egg McMuffin (with no meat) with a hashbrown stuffed into the sandwich. Well I looked at it and realized that I was eating 80% of my diet in one bite. Bread, Egg, Cheese, and Potato. So I started to get more creative in my cooking.
